Luqaimat (sweet dumpling)

Ingredients for luqaimat
• 1 cup all-purpose flour
• 3 tbsp milk powder
• Pinch of salt
• Pinch of sugar
• ¼ tbsp yeast
• ½ cup water
• ½ liter (about 2 cups) sunflower oil (for frying)
Ingredients for sugar syrup
• 2 cups sugar
• 1½ cup water
• 1 tsp lemon juice
Even better – use date syrup or honey.
Instructions for luqaimat
1. Combine all the ingredients (flour, milk powder, salt, sugar, yeast).
2. Add water gradually and mix well until there are no lumps. The batter will be a gluey consistency, a bit heavier than cake or pancake batter. The traditional way to mix is by hand. Get your fingers in there and mush everything together. To remove lumps, slap batter against the side of the bowl with your hand and quick flicks of the wrist.
3. Cover the batter and let rise until it doubles in size, about 2 hours.
4. Heat oil over medium flame.
5. Drop tablespoon-sized pieces into the hot oil and fry until golden brown on all sides.
6. Remove the fried pieces from the oil and allow to cool a bit.
7. Drizzle the fried pieces in the syrup or honey and serve.
Instructions for sugar syrup
1. In a small pot, combine sugar, lemon juice and water.
2. Boil for several minutes until the mixture thickens to a light syrup and allow to cool.
